Undoubtedly one of the star dishes I've had in the restaurant menu throughout Javea Watchtower summer. This is a hemisphere of foie micuit mounted on a toasted brioche baked with brown sugar, add a quenelle to boot apple ice cream Granny Smith.

The freshness of apple ice cream mouth contrasts perfectly with the strong flavor of the foie. Furthermore violet jam ends to complete a set of harmonized and well balanced flavors.
